This is a must-have at the sugar shack, and at the same time, it's a relatively unknown Quebec recipe! This recipe involves only two ingredients: eggs and maple syrup... and if you really want to impress, serve it with vanilla ice cream. Delightfully simple, this easy recipe contains only two ingredients: eggs and maple syrup!

Tip: Butter the edge of your pan
To prevent overflow, it's suggested to butter the inner rim of the pan with a square of butter or some fat.
Step 1: Cook the maple syrup
Boil the maple syrup until it reaches the consistency of taffy, or 26°F above the boiling point of water. The exact degree may vary depending on atmospheric pressure, and for precise measurement, you can use a candy thermometer. Generally, this temperature hovers around 234°F (112°C). An alternative if you don't have a thermometer on hand is to put ice in a glass of water, and when you drop a drop of maple syrup (taffy) inside, if it settles to the bottom intact (instead of dissolving), you've reached the right consistency.
Step 2: Beat the eggs
Beat two eggs and pour them into the boiling maple syrup.
Step 3: Cook the eggs
Let them cook for about 1 minute, gently stirring until the eggs have a firm appearance.
Step 4: Drain
Remove the eggs from the maple syrup using a ladle and serve.
Step 5: Repeat
Repeat with two eggs in the boiling taffy, as long as there are takers!
A little extra
Absolutely divine with vanilla ice cream, the eggs in the syrup can be stored in the fridge, and some say they are even better the next day. Enjoy!
